Daffodils are blooming, trees are budding, and signs of Easter are everywhere this Spring day. Things are in "full bloom" at the bakeshop as well. Easter Egg Pound Cakes, Chick Hi-Hats, Hot Cross Buns, Jelly Bean Cupcakes, Babka, Almond & Poppyseed Strudel, and our Butter Cookies galore fill our shelves this week. The Philadelphia Inquirer had called last week with questions regarding pound cake and what makes it so special for Easter. Questions kept coming back to the ingredients and the significance in the ingredients. I have no idea if the journalist ran with the story or not but I was quite clear; though I think our pound cake is quite special... the significance is not in the ingredients but rather in it's shape at Easter. Pound cake is solid enough to bake into the shape of an Egg and strong enough to hold up for the decadent chocolate fudge icing. The trim and Easter flowers finish off this cake and make it come to life as a specialty for this holiday. The egg is a symbol of new life, much like a butterfly coming forth from a cocoon. There's a hymn that was one of my husband's favorites called Hymn Of Promise. Perhaps you know the words.... "In the bulb there is a flower, in the seed an apple tree, in cocoons a hidden promise, butterflies will soon be free! In the cold and snow of winter there's a spring that waits to be, unrevealed until its season, something God alone can see." The last line points us to the whole meaning of Easter and the true significance of our Easter Egg pound cake: "In our end is our beginning; in our time infinity; in our doubt there is believing; in our life eternity. In our death, a resurrection; at the last a victory, unrevealed until its season, something God alone can see." Easter is all about the finished work of Christ dying on the cross, so that we all may live. The promise of new life, resurrection after death for all who believe!
